Pasta Cooking at its best with Johanne McInnis
ANGEL HAIR PASTA WITH SHRIMP AND BASIL
1 (8oz) package uncooked angel hair pasta, vermicelli or spaghetti
¼ cup olive oil or vegetable oil
1 teaspoon finely chopped garlic
25-30 medium raw fresh or frozen shrimp, shelled-deveined and rinsed
1 (28oz) cam diced tomatoes
½ cup dry white wine, chicken stock or apple juice
¼ cup fresh chopped parsley or 2 tablespoons dried parsley
3 tablespoons freshly chopped basil leaves or 2 teaspoons dried basil leaves

1.        Prepare pasta according to package directions. Drain and toss with 1 tablespoon of oil. Keep warm.

2.        In large skillet, add remaining oil and garlic. Cook over medium-high heat, stirring constantly, until garlic is tender (30 to 60 seconds). Add shrimp and continue cooking until shrimp turns pink (1 to 2 minutes). Remove shrimp and set aside.

3.        Stir in remaining ingredients, bring to a boil and continue cooking, stirring occasionally, until liquid is reduced by appx. half (7 to 10 minutes). Add shrimp and continue cooking for 2 to 3 minutes.

4.        Serve over cooked pasta.
