Cooking at its best with Johanne McInnis

Here's an award-winning recipe for muffins like you've never seen before. These are something completely different and I usually double the recipe; freeze half so that I'll have some for later. Unfortunately, so do my kids so there's never any when I need them.

Cheddar apple muffins

  • 3 cups flour
  • 2/3 cups sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • I teaspoon cinnamon
  • 2 cups grated cheddar cheese
  • 2 eggs
  • 1 cup apple juice
  • ½ cup butter or margarine, melted
  • 2 cups peeled and finely chopped apples

Preheat oven to 350F. Combine first five ingredients in a large bowl. Mix in cheese.

In a second bowl, beat eggs. Add apple juice, stir in butter and apple. Add wet mixture all at once to the flour mixture. Stir just until moistened (IT WILL BE REALLY LUMPY)

Fill greased or papered medium muffin tins, about ¾ full. Bake for 25-30 minutes.

Makes about 2 dozen
