BREAD AND BUTTER PICKLES

  • 16 cups cucumber, thinly sliced
  • 6 medium onions, sliced
  • 1 red pepper, finely diced
  • 1/3 cup coarse salt
  • 3 cups vinegar
  • 3 cups sugar
  • 1 ½ tsp turmeric
  • 1 ½ tsp celery seed
  • 2 tbsp mustard seed
  • large bag of ice

In a bowl, mix cucumber, onion and red pepper. In a very large bowl, layer vegetables, salt and ice. Starting and ending with ice. Sprinkle each layer of ice with the coarse salt, then add veggies, then ice, then salt, etc… finishing with ice. Let stand for 3 hours. Drain vegetables well.

Heat vinegar, sugar, turmeric and seeds to boiling. Add vegetables and bring back to boiling.

Pack in hot mason jars and seal.
