Chipotle lime grilled chicken
Some like it HOT… and then there's this recipe. Chipotle (chip-poht-lay) peppers are red jalapeno peppers that are smoked and then dried. The adobo sauce is a light but spicy tomato sauce. You can find them canned in the "speciality section" of your grocery store where you find Mexican, Indian, etc.. You won't be disappointed if you like HOT, HOT, HOT…
- ¼ cup olive oil
- ¼ cup fresh lime juice
- 1 chipotle pepper in adobo sauce, chopped (2 if you think you can stay the HOT…)
- ¾ tsp salt
- 2 tsp honey
- 4 chicken breasts
In food processor combine all ingredients except honey & chicken, until well blended. Put chicken in a large sealable bag with about 1/3 cup marinade; put aside the remainder as reserved sauce. Seal bag, forcing out excess air, and marinate chicken at room temperature, about 15 minutes.
Stir honey into reserved sauce until dissolved. Grill chicken (discard marinade in bag) on lightly oiled grill, turning chicken over occasionally, until just cooked through, 10 to 15 minutes total.
Brush both sides of chicken with some of the reserved sauce, then continue to grill, turning over once, until lightly browned, about 1 minute more.
Serve chicken drizzled with remaining sauce.
