Cooking at its best with Johanne McInnis

I begged a friend for this recipe and ended up having to bake her a cheesecake in order to get it. It was worth the effort. It’s fantastic with a big dollop of whiped cream.

GINGERBREAD - KENTUCKY STYLE

3     eggs
1     cup sugar
1     cup molasses
1     cup shortening (melted)
1     teaspoon cloves
1     teaspoon ginger
1     teaspoon cinnamon
2     teaspoons baking soda
2     tablespoons hot water
2     cups all-purpose flour
1     cup boiling water

1.     Preheat oven to 350F. Grease a 13X9 pan.

2.     Blend eggs, sugar, molasses, shortening and spices in a large bowl. Mix well.

3.     Dissolve baking soda in the 2 tbsp. hot water and stir into the mixture. Sift flour into mixture and beat well. Add boiling water and beat a few seconds to blend well.

4.     BATTER WILL BE VERY THIN.

5.     Sprinkle with sugar and bake about 45 minutes or until toothpick comes out clean. Allow to cool on racks.
