Misc. Cooking at its best with Johanne McInnis

This marinade can be used for fish, chicken or pork. I usually make it in the morning before I leave for work and let the meat marinade all day. It's quick, tasty and cheap!

HONEY MUSTARD MARINADE
½ cup mayonnaise (regular, lite or fat free)
¼ cup mustard (yellow or Dijon)
¼ cup honey
2 tblsp olive oil
1 tsp garlic, minced

1.        Place all ingredients in a medium size bowl and blend thoroughly.

2.        Add chicken, fish or pork. Cover and place in refrigerator between 1 - 7 hours. (The longer you leave in the marinade, the more tender and tasty the result)

3.        Remove from refrigerator and let sit at room temperature for 15 minutes.

4.        Bar-b-q (chicken and pork) for 15-20 minutes or until meat is no longer pink. Discard leftover marinade and do not use for basting

5.        If cooking in oven, bake at 350 for 35-45 minutes for pork or chicken, or 15-20 minutes for fish.
