Annette Allain's CHICKEN LASAGNA

9 lasagna noodles cooked
3 boneless skinless chicken breasts
1½ cups sliced fresh mushrooms
2 cans Golden Mushroom Soup
3/4 cup water
500 ml container cottage cheese
2 cups grated mozzarella cheese

Cut up chicken in bite-size pieces and stir fry in olive oil for a few minutes, until meat is cooked. Add mushrooms and cook again for a few minutes. Add soup and water. In a 9"x9" pan , cover bottom of dish with a thin layer of sauce mixture; cover with lasagna (cut to fit); sauce again and a layer of cottage cheese. Continue layers; noodles, sauce. Cottage cheese until finish; last layer is sauce. Cover with foil and bake at 375F for 25 minutes. Remove from oven, cover with mozzarella cheese and return to oven for 15 minutes uncovered. Then broil for a few minutes to get a golden topping.
