Believe it or not, this recipe is on the back of a manicotti box that I picked up in the grocery store one day. The first time I made it, both my daughters turned their noses up at me and made funny faces but once they tasted it, that was it. If I ask my youngest, what she wants me to make the answer is manicotti. However, don't rely on my opinion, try it for yourself.

Manicotti

  • 1 tablespoon olive oil
  • 1 package manicotti noodles
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 small onion, diced
  • 1 teaspoon garlic, minced
  • 500 ml container of light cottage cheese
  • 1/3 cup mozzarella cheese
  • 1 egg, lightly beaten
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon dried basil
  • small can of catelli meat sauce
  • large can of tomato sauce
  • 1 cup of water

Cook manicotti noodles according to package direction. Rinse and set aside

In a large saucepan, heat oil. Add yellow pepper, red pepper, onion and garlic. Sauté until onion is tender. Remove from heat and add cottage cheese, mozzarella cheese, Parmesan cheese, egg and basil.

Combine catelli, tomato sauce and water. Mix and pour half in a 13X9 baking dish. Stuff shells with cheese mixture and place in dish on sauce. Pour sauce over manicotti shells and cover with foil.

Bake in oven for 45 minutes at 350F.
