Cooking at its best with Johanne McInnis

So you say you are a garlic lover huh?. Well here's the recipe for you. This marinade is rich in texture and has an unmistakable flavor of garlic you and the guests won't soon forget. Best served with beef or chicken but can also be used with pork.

GARLIC LOVER'S MARINADE

  • 2 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 1 tablespoon chopped fresh or 1 teaspoon dried rosemary leaves, crushed
  • 1 tablespoon water
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon ground mustard
  • 3 tablespoons red or white wine vinegar, dry sherry or apple juice

1. Heat oil in skillet over medium-high heat. Cook garlic in oil, stirring frequently, until golden.

2. Stir in rosemary, water, soy sauce and mustard; remove from heat. Stir in vinegar; cool. Use to marinade 1 pound beef, pork or chicken. Place on meat and marinade for up to 2 hours.

3. Bake, broil or grill meat to your liking.

Makes ½ cup of marinade
