Meat Cooking at its best with Johanne McInnis
This is a great recipe and something different that can be done with hamburger or left over mashed potatoes. It takes about 1 hour to make but I guarantee it will become a favorite.

BACON-CHEESEBURGER POTATO PIE
1 ½ pound of extra lean or lean hamburger
½ cup breadcrumbs
¼ cup finely chopped onion
¼ cup ketchup
2 teaspoons mustard
½ teaspoon salt
3 slices bacon
2 cups mashed potatoes
1 cup shredded cheddar cheese
1 tomato, chopped
2 green onions, sliced if desired

1.       Heat oven to 375F. In medium bowl, combine hamburger, bread crumbs, onion, ketchup, mustard and salt; mix well. Press the mixture in bottom and up sides of an ungreased 9-inch pie pan. Bake at 375F for 15 minutes.

2.       Cook bacon until crisp, drain on paper towel, cool and crumble.

3.       In medium saucepan add mashed potatoes, garlic salt and ½ the cup of cheese. Slowly heat until warm and cheese melted.

4.        Remove partially baked beef crust from oven; pour off any drippings. Spoon potato mixture evenly into crust. Return to oven; bake an additional 10 to 15 minutes or until hamburger crust is thoroughly cooked.

5.       Remove pie from oven. Top with tomato, remaining cheese and crumbled bacon. Return to oven and bake an additional 5 minutes or until cheese is melted. Remove from onion and top with green onions. Let stand for 10 minutes then cut into wedges to serve. Nicely served with a helping of salad.
