Cooking at its best with Johanne McInnis

These cookies are so good they never more than 48 hours in the house, even if I try to hide them. The recipe was given to me by my next door neighbor years ago and she told me the recipe was from her mom, so I would say it’s a pretty old but obviously popular recipe.

Old fashion oatmeal cookies

1 cup brown sugar, packed
1 cup butter or margarine, softened
1 egg
1 teaspoon vanilla extract
2 cups quick cooking oats
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon allspice
1/2 cup seedless raisins

In bowl, with electric mixer at medium speed beat sugar and margarine until blended. Beat in egg and vanilla until mixture is smooth. Blend in oats, flour, baking soda and allspice. Stir in raisins.

Drop batter by tablespoonfuls, 2 inches apart, onto greased baking sheets. Bake at 400 for 5 to 7 minutes or until lightly browned. Remove from sheets, cool on wire racks.

Makes about 3 dozen.
