Misc. Cooking at its best with Johanne McInnis

I’ve had this recipe for so long I can’t remember where I got it. All I know is that my kids won’t eat pancakes that come out of a box because they don’t taste “real”. The secret to a light and fluffy pancake is to not overmix the batter. My youngest daughter likes adding chocolate chips as an alternative.

Pancakes from scratch
1 cup Flour
2 tsps baking soda
½ tsp Salt
2 tbsp Sugar
1 cup Milk
1 Egg
1 tbsp Oil

1.        In a large measuring cup or bowl, combine flour, baking soda, salt and sugar.

2.        In small bowl, combine milk, egg and oil.

3.        Add milk mixture to flour mixture and mix until moist. (It should still have lumps in it)

4.        Pour unto a hot griddle or frying pan and turn when bubbles appear on surface of pancake.


Makes 10-12 small or 5-6 large pancakes
