BBQ'ing at its best with Johanne McInnis
My family loves bar-b-q's and after I started making this recipe, they no longer wanted hamburger and hot dogs. This has become a household favorite and it's usually what I make if we have company coming over. They usually leave begging for the recipe.

Lemon Pepper Chicken
4 Chicken breast, boneless and skinless
1 tblsp grated lemon rind
¼ cup lemon juice
2 tblsp olive oil
2 tsp pepper
½ small onion, finely chopped
1 clove garlic, minced
1 lemon, sliced

1.       1. Place chicken in a shallow dish.

2.       2. Whisk together all other ingredients and pour over chicken, turning to coat it well.

3.       3. Cover and refrigerate for 2 - 7 hours. (The longer you marinade, the more intense the taste)

4.        4. When ready to bar-b-q, remove from refrigerator and let stand at room temperature for 30 minutes.

5.       5. Barb-b-q chicken, basting occasionally with marinade until juices run clear. (About 20- 25 minutes depending on the thickness of the chicken)
