Pasta Cooking at its best with Johanne McInnis

Spaghetti and what? Yes, I know the combination of ingredients certainly sounds strange, but my 13 year old begged me to try this recipe and by golly it's good. Real good. I've used it as a brunch recipe a few times and it gets funny looks until people taste it, then it's all gone and pretty fast at that. Great recipe for kids to make.

SPAGHETTI WITH EGGS AND BACON

  • 2 Tablespoons olive oil
  • 5 ounces of bacon, cut into short sticks (about 5-6 strips)
  • 1 garlic clove, crushed
  • 14 ounces spaghetti
  • 3 eggs, at room temperature
  • ¾ cup grated Parmesan cheese

In a medium frying pan, heat the oil and sauté the bacon and the garlic until the bacon is well cooked and the fat is somewhat browned. Keep warm.

Cook the spaghetti in a large saucepan in plenty of boiling water. Meanwhile warm a large serving bowl (very large) and break the eggs into it. Beat in the Parmesan cheese with a fork, and season with salt and pepper.

As soon as the pasta is done, drain it quickly and mix it into the egg mixture. Add the bacon garlic mixture. The heat from the pasta and bacon fat will lightly cook the beaten eggs. Serve immediately.
