Leeks play a big part of traditional Irish "cuisine". This is a nice brunch item on it's own or can be served as a first course. Very tasty and "green" of course.

Leek Tart

1     recipe pie dough or ready made pie crust
3     pounds of leeks, cleaned, trimmed and julienned
3     tablespoons butter
1     teaspoon chopped thyme
2     eggs
1/3     cup heavy cream
1     cup grated Gruyere or Swiss cheese

1.     Preheat oven to 425 degrees.

2.     Line a 9-inch pie pan with dough. Melt the butter, add leeks and season and cook covered over medium to low heat for 20 minutes until softened. Mix the eggs and cream and all but 1/4 cup of the cheese and add the cooled leeks. Pour into pie shell, top with cheese and bake for 40 minutes.

3.     Cool for 15 minutes before cutting and serving. Makes 6-8 servings
